Apparently AMD's "Pro" edition drivers from august have made Godot Vulkan rendering unusable. Since my game was using Vulkan initially, since August it would appear as a complete mess on players' screens who were using AMD GPUs with the latest drivers. Swapped the rendering to DirectX12 and the issue is now fixed. Thank you AMD!
